What are Microherbs & Why should I be eating them ?
Microherbs are the seedlings of vegetables and herbs, harvested at 1-2 weeks, specifically greens that have been harvested after the cotyledon leaves have developed. These greens are increasing in popularity because they are packed full of nutrients and studies are showing have many more health benefits than their mature fully-grown counterparts.
So why are they so healthy and what benefits can we get?

Microherbs contain condensed amounts of nutritional vitamins, that when added to our diet works to balance the body and keep the gut healthy. Studies have shown Pea-shoots, Broccoli sprouts, Radish Sprouts and sunflower sprouts all contain high levels of antioxidants. One cup of pea shoots provides about 35% the daily value of vitamin C (7 times as much as blueberries) and 15% the daily value of vitamin A (4 times as much as tomatoes). Pea shoots have an outstanding nutrient to calorie ratio and offer a good amount of dietary fibre, which helps regulate the metabolism.
